Active8me Recipe – Old Cucumber Soup with Basmati Rice

This staple on the Chinese dinner table is believed to relieve heat retained in the body by having a ‘cooling effect’. In our hot, humid environment why not put this old cucumber soup recipe to the test? Your health can benefit in the process too. Old cucumber is said to be good for the skin and have anti-aging effects, while the red dates have a lot less sugar than other dates, and they are also a rich source of vitamins and minerals.

Active8me old cucumber chicken soup

Ingredients

✓  120g skinless chicken leg with bones, chopped
✓  130g old cucumber, remove seeds and cut into pieces
✓  3 dried red dates, remove seeds
✓  2.5g chicken stock cube (lower in sodium), dissolved in 200ml hot water
✓  1 tsp sesame oil
✓  ½ bowl basmati rice

Method

1.Cook basmati rice as per label instructions.

2. Season chicken with salt, pepper and sesame oil and set aside.

3. Heat a small pot, add in chicken stock, chicken, old cucumber and red dates and bring to boil. Close lid and allow to simmer on low heat for 15 to 20 mins.

4. Serve soup with basmati rice.
